Bourgogne Tonnerre Le Clos du Château is a white Burgundy made from 100% Chardonnay. The soil consists of classic limestone and Kimmeridgian clay, where the vines thrive in the Èpicier area. Both the alcoholic and malolactic fermentation processes occur in stainless steel tanks, allowing the wine to sit on the dead yeast cells for up to 10 months, extracting both mineral and classic Burgundy notes. As indicated on the label, the Chardonnay vineyards are located close to the winery – “le Clos du Château“ – and are cultivated according to organic regulations, aiming for certification with “The Green Eco Leaf“ label in 2024.
