Amarone is a red wine with a beautiful deep red color; it has a full and pleasant aftertaste of pepper, blackberries, leather, and cherries. Amarone pairs well with hearty dishes of beef and rich stews.
During the drying process, the grapes lose 50% of their weight; the drying process increases the sugar concentration and also develops the aromatic and polyphenolic potential. After the drying of the grapes, they are crushed and destemmed, then poured into stainless tanks and fermented at controlled temperature for 2-3 weeks, after which the wines are aged in oak barrels for 18 months before being bottled.

Organic Moscato d’Asti is a beautiful, fruity, and sweet dessert wine with light bubbles on the palate. It is made from Moscato Bianco grapes from vines at least 10 to 20 years old. The soil consists of clay and limestone, and after pressing the grapes, fermentation occurs at a low temperature of 15°C. The fermented must is then transferred to pressurized tanks (Charmat Method), resulting in this lovely example of a well-balanced and graceful Moscato d’Asti! Flavor notes include orange, white flowers, and passion fruit.

Champagne Pascal Lejeune MITONYMIE “Figure de Style No.1” is crafted from grapes sourced from the heart of Epernay, Moussy, and Vinay. The soil consists of clay, limestone, sand, and silt, with steep slopes where the vines are over 30 years old. The vineyards transitioned to organic cultivation 3 years ago but have been following sustainable practices for 23 years! The wine rests for 6 months in stainless steel tanks, with 10% aged in Burgundy barrels, regularly stirred to extract flavor from the yeast cells. Bottling typically occurs in March—this vintage is from 2019.
